Watermelon Jicama Salad

Renowned chef Tim Hollingsworth offers Insiders a fresh and sophisticated salad with a little bit of sweet, savory, and spice. We recommend pairing it with our 2017 Voluptueux Malbec Rosé.

Ingredients
1 cup watermelon, medium-diced
1/2 cup jicama, medium-diced
1/2 cup cucumber, peeled, seeds removed, and medium-diced
4 radishes, thinly sliced
2 jalapeños, seeded and small-diced
1/2 cup Feta, crumbled
Extra virgin olive oil
Cilantro leaves, for garnish
Maldon salt, for garnish

Steps
In a small bowl, toss all ingredients together except salt and cilantro. Arrange on plate. Garnish with cilantro leaves and salt.
