Renowned Chef Tim Hollingsworth offers Insiders a deliciously seasoned steak topped with a savory marinade. We recommend enjoying it with our 2018 Wolfson Cellars Zinfandel.

Ingredients for Steak
New York steak
salt
pepper

Steps
Season the New York steak liberally with salt & pepper on all sides. Grill on medium high heat to a medium-rare doneness.

Ingredients for Za'atar Onions
1 medium size vidalia onion
2 tsp salt
1/2 lemon, juiced
1 tsp jalapeno pepper
2 tsp sumac
1/2 bunch fresh za'atar leaves, picked (if fresh za'atar is not available, you can buy savory or thyme)

Steps
Slice onion with a very sharp knife. Toss in salt thoroughly and let sit for 2 hours. Combine with the remainder of ingredients. Allow the mixture to marinade for at least 30 minutes before serving.
