In Languedoc, the climate is Mediterranean year-round with late ripeness. Mild temperatures in autumn, winter, and spring, combined with hot, dry summers, allow the vine to thrive. The Tramontane, a strong wind, provides a vacuum for the grapes to dry naturally. Clay and limestone soils in which this wine grape is grown provide roundness. This southern climate and modern but traditional winemaking techniques make the freshest and most balanced wines. The grapes are soft pressed before being fermented in steel, temperature-controlled vats–a process that preserves the wine’s subtlest flavors.
